Happy Birthday Olivia

Yay, everything is right with my blog again, and I am so happy to be back at it!

It was a long haul, and it’s amazing how easy it is to mess up technology and how hard it is to fix it!  Maybe I’ll blog about it later, but today’s post is about my one and only (at least for now ;) beautifully lovely daughter, Olivia, on her 7th birthday.

You love bugs and the royal family, and hate broccoli tops and going to sleep!  You want to be a Veterinarian when you grow up, but only if your whole family will move to Saskatoon with you :)

David and Sarah ….. wedding

Often with out of town wedding clients we don’t have a chance to meet until the day before and sometimes it’s the day of the wedding.

I was so excited to finally meet Sarah and David the evening before their wedding, we had chatted so much before that I felt like we knew eachother and I couldn’t have been more right, their wedding felt like spending the day with old friends!

I was thrilled that they chose to have a private moment in the “first look”, it really is an amazing opportunity for the bride and groom to see each other secretly before the ceremony.

I was very honoured to be invited to capture this amazing day, I love the roller coaster of emotions a wedding brings.

My favourite things….. giveaway

Last night I hosted an oscar party with the ever fabulous Jacqueline from the JAC of all trades.  I will definitely blog about the whole evening, but today I’m just going to share one of my favourite parts.

Everyone was to bring their favourite $20 luxury beauty product and the winners from the oscar ballot contest would go home with all the loot!

I loved seeing what everyone brought, different products that you never would have used or chosen before~ everything from boutique hand lotion, to night cream, makeup.

That had me thinking of my favourite things and how when something works for you and you love it you just want to share them with friends.  I feel so fortunate to have a small platform that people actually read, lol.  I’m always surprised when I’m out and about and someone will mention having read something on my blog (and that it’s not my Mum or bestfriend!)

So in the spirit of “my favourite things” and wanting to say thank you to all my lovely and faithful blog readers I would love to giveaway one of my favourite!

If you read my post last week you’ll be familiar with this cookbook.  My ever-so-smart sister gave me the first one and I instantly fell in love, the recipes are delicious and are only made better by the beautiful photography!  I have since collected all three :)

dutch apple pancakes

A new favourite for Sunday morning breakfast are these dutch apple pancakes :)

Ingredients:

  • 1 cup whole milk
  • 4 large eggs
  • 3 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 2/3 cup all purpose flour
  • 4 tablespoons butter
  • 2 apples, peeled, cored, thinly sliced

  • 3 tablespoons (packed) golden brown sugar
  • Powdered sugar (optional)
  • Whipped cream

Preheat oven to 425°F.

Place butter in 13×9-inch glass baking dish. Place dish in oven until butter melts, about 5 minutes. Remove dish from oven. Place apple slices in overlapping rows atop melted butter in baking dish. Return to oven and bake until apples begin to soften slightly and butter is bubbling and beginning to brown around edges of dish, about 10 minutes.

Whisk milk, eggs, sugar, vanilla, salt, and cinnamon in large bowl until well blended. Add flour and whisk until batter is smooth.

Pour batter over apples in dish and sprinkle with brown sugar. Bake pancake until puffed and brown, about 20 minutes. Sprinkle with powdered sugar, if desired. Serve warm.

coconut lime muffins

Here is the recipe for my latest kitchen creation!

If you have never cooked with coconut oil before, this is a great way to try it out.  Don’t be surprised when you buy it and it is a solid white consistently.  You use it in two different ways for this recipe, one melted and one solid.

{RECIPE} preheat the oven to 400F

2 cups flour

1 TBSP baking powder

1/3 cup sugar

1/2 tsp salt

1 cup shredded coconut

rind of 2 limes

cut up 1 of the limes into small pieces (save the other lime for later)

Mix all of the above ingredients together and set aside.

1/3 cup melted coconut oil

1 egg

1 cup milk (use coconut milk if you have it)

mix together then stir into the dry in ingredients.

(make sure when you mix together you stir it the least amount possible, just enough to moisten the dry ingredients)

Scoop the mix into 12 muffin tins.  I use an old well seasoned muffin tin that doesn’t need muffin cups, you can use whatever you prefer.

{TOPPING}

mix together

1/2 cup oats

1 TBSP sugar

1/4 cups shredded coconut

1/4 cup coconut oil.

Mix together with your hands until everything is well combined and top each muffin before baking.

Bake for 17 minutes, check the muffins around 10-12 minutes and make sure the topping isn’t getting too dark.  If it is place a piece of tin foil over top them to keep the topping from burning.

When the muffin are out of the oven mix together the juice from the 2nd lime and 1/4 cup of sugar, until the sugar is dissolved.  Drizzle the glaze over the top of the muffins.

I hope you enjoy these muffins, they have become a fast favourite at our house!

magical forest ….. miss A

This was a super fun and special session for me, I loved collaborating with Miss. A’s Mum to create a girly, princess, and everything magical, photo session.  I had so much fun I’m not sure who enjoyed it more her or I :)

I love to create special whimsical photo sessions for clients who have a vision of something different.  Even if you don’t know exactly what they want, we can collaborate and come up with something unique and authentic for you.

Winter family photos {mini-sessions}

It’s a wonderful time of year to capture family photos while loved ones are visiting.

While I generally do not take sessions in December, I have had a few lovely families enquire about family sessions while they were all together during the holidays.  I have put together a mini session package that allows for a wonderfully wintery family photo.

I love little chubby 2 year old feet!  It’s amazing how quickly between 2 and 3 that they loose this, I am so thankful that I took the time to photograph all the small details of them growing up.
