coconut lime muffins

Here is the recipe for my latest kitchen creation!

If you have never cooked with coconut oil before, this is a great way to try it out.  Don’t be surprised when you buy it and it is a solid white consistently.  You use it in two different ways for this recipe, one melted and one solid.

{RECIPE} preheat the oven to 400F

2 cups flour

1 TBSP baking powder

1/3 cup sugar

1/2 tsp salt

1 cup shredded coconut

rind of 2 limes

cut up 1 of the limes into small pieces (save the other lime for later)

Mix all of the above ingredients together and set aside.

1/3 cup melted coconut oil

1 egg

1 cup milk (use coconut milk if you have it)

mix together then stir into the dry in ingredients.

(make sure when you mix together you stir it the least amount possible, just enough to moisten the dry ingredients)

Scoop the mix into 12 muffin tins.  I use an old well seasoned muffin tin that doesn’t need muffin cups, you can use whatever you prefer.

{TOPPING}

mix together

1/2 cup oats

1 TBSP sugar

1/4 cups shredded coconut

1/4 cup coconut oil.

Mix together with your hands until everything is well combined and top each muffin before baking.

Bake for 17 minutes, check the muffins around 10-12 minutes and make sure the topping isn’t getting too dark.  If it is place a piece of tin foil over top them to keep the topping from burning.

When the muffin are out of the oven mix together the juice from the 2nd lime and 1/4 cup of sugar, until the sugar is dissolved.  Drizzle the glaze over the top of the muffins.

I hope you enjoy these muffins, they have become a fast favourite at our house!
